This flour adds a lovely, subtle nutty taste to the flatbread. It pairs incredibly well with intense smoked salmon.

Don’t forget about delicate, zesty cream cheese, crunchy red onion and fresh cucumber. Add loads of chives and parsley on top, and you have a perfectly tasty and nutritious breakfast or brunch.

To prepare this smoked salmon flatbread you will need:

  • homemade (recipe below) or store bought flatbread or focaccia
  • smoked salmon (hot or cold)
  • cream cheese
  • red onion
  • cucumber
  • lemon
  • chives
  • parsley
  • dill (optional)
  • capers (optional)

Smoked salmon flatbread

This smoked salmon and cream cheese flatbread is a delicious idea for breakfast or brunch. This easy to make flatbread will be great as a lunch for work or as a snack for a meeting with friends.

Ingredients
  

Flatbread

  • 300 g spelt flour
  • 7 g instant yeast
  • 1 tbsp natural yogurt at room temperature
  • ½ tsp sugar
  • 1 tsp salt
  • 200 ml water lukewarm
  • 1 tbsp olive oil plus extra for brushing

Toppings

  • 250 g smoked salmon
  • 250 g cream cheese
  • 3 tbsp greek yoghurt
  • ½ red onion thinly sliced
  • 1 lemon
  • 2 tbsp parsley chopped
  • 2 tbsp chives chopped
  • 1 tbsp dill chopped
  • 1 tbsp capers optional

Instructions
 

  • In a large mixing bowl combine all the ingredients for flatbread.
    300 g spelt flour, 7 g instant yeast, 1 tbsp natural yogurt, ½ tsp sugar, 1 tsp salt, 200 ml water, 1 tbsp olive oil
  • Stir with a fork or wooden spoon. Continue mixing until the dough comes together and forms a ball.
  • Transfer the dough to a lightly floured surface and knead for about 8 minutes until it becomes smooth and elastic.
  • Place the dough in a greased bowl and cover it with a clean kitchen towel. Let it rise in a warm, draft-free place for about 1 hour, or until it has doubled in size.
  • Preheat your oven to 425°F (220°C)
  • Put the dough on a lightly floured board and roll it out into a 25×30 cm cake.
  • Transfer to a baking sheet lined with baking paper, cover with a linen cloth and leave for 15 minutes.
  • Brush the dough with olive oil and place in the preheated oven. Bake for 20 minutes.
  • Remove the flatbread from the oven and transfer it to a wire rack to cool slightly before serving. While the bread is cooling down, prepare the toppings.
  • Mix cream cheese with yoghurt, season with salt and freshly ground pepper.
  • Cut the red onion, cucumber and lemon into thin slices. Finely chop the parsley, dill and chives.
  • Spread the cream cheese evenly on a cooling flatbread.
  • Add the salmon torn into smaller pieces, cucumber, onion, lemon. Sprinkle with chives and parsley and freshly ground pepper.
