Lemon asparagus chicken pasta – ingredients
Chicken. Hello proteins! Preferably organic or free-range. To prepare this lemon asparagus chicken pasta you can use boneless chicken breast or you can substitute it with boneless skinless chicken thighs.
Asparagus. The “it” vegetable of spring/summer season. Look for firm, straight, and brightly colored stalks with tightly closed and compact tips. Remember to trim the woody ends!
Pasta. I love this lemon asparagus chicken pasta with long pasta like tagliatelle or papardelle, but you can choose whichever kind you happen to have in your cupboard. Whole wheat pasta also works great here.
Heavy cream. If you want velvety smooth sauce, heavy cream is your go to dairy.
Cheese. Lovely cheesiness of this creamy dish comes from combining cheddar cheese and parmigiano reggiano. They are both flavorful and take this dinner to another level.
Lemon. You’ll find 1 big lemon in recipe, but try adding 1/2 lemon more if you like more tangy and fresh dishes.
How to prepare lemon asparagus chicken pasta
Cook pasta. Bring a large pot of salted water to a boil. Add the pasta of your choosing and cook according to the package instructions until al dente. Drain the pasta, reserving a half cup of water from cooking, and set aside.
Prepare the chicken. Dice the chicken in large cubes. Season the chicken with salt and pepper. In a large skillet, heat one tablespoon of oil over medium heat. Add the chicken and cook until golden. Remove the chicken from the skillet and set it aside to rest.
Prepare the asparagus. In the same skillet, add another tablespoon of olive oil if needed. Add the asparagus pieces and cook for about 4 minutes, stirring occasionally, until they are crisp-tender.
Prepare the sauce: Pour the heavy cream and lemon juice to the pan. Bring it to a simmer and let it cook for 2 minutes on low heat. Add grated Cheddar and Parmesan cheese. Stir well until the sauce is smooth and creamy. Season with salt and pepper to taste. If the sauce is too thick, add the water from boiling pasta.
Combine the ingredients: Add the chicken and cooked pasta to the skillet with the sauce and asparagus. Toss everything together gently until well coated with the sauce.
